Feeding your little ones is a tough job. They always want to eat tasty food, but tasty food cannot be nutritious all the time. Kids are very picky eaters, they straight away refuse to eat green vegetables and healthy meals that don’t taste so good. Here are some very quick and easy to make vegan dinner recipes that are so tasty, it will make your kids want more and leave them licking their fingers afterward.

Creamy Chickpeas Curry

Ingredients:

Boiled Chickpeas 1 cup

Olive oil 2 tablespoon

Chopped onions 2 big

Chopped tomatoes 2 medium

Crushed garlic 5-6

Garam masala powder 2 teaspoon

Cumin 2 teaspoon

Coriander powder 2 teaspoon

Turmeric powder 2 teaspoon

Coconut milk 1 cup

Salt to taste

Preparation:

Heat olive oil in a pot, add chopped onions and after a few minutes add crushed garlic, fry them till the onions are softened and golden brown. Now add the spices one by one and fry them for a minute. After that, add the chopped tomatoes and saute them well. Now add in the boiled chickpeas and pour some coconut milk on it. Bring the curry to a simmer and leave it with medium flame for 10 minutes. Stir it in between to nicely blend all the flavors. Add salt by taste preference.

Put some fresh chopped cilantro on top of it and serve with steaming rice.

Vegetable Soup

Ingredients:

1 tablespoon butter

1 onion chopped

2 cloves of garlic crushed

3 carrots sliced

3 celery sticks sliced

1 cup peas

1 bell pepper sliced

1 cup vegetable stock

2 big tomatoes chopped

1 tablespoon soy sauce

Salt and pepper as required

Preparation:

Melt and heat the butter in a saucepan and add chopped onions and crushed garlic, saute them until soft and translucent. Add the carrots, celery, peas, bell pepper, and fry them for 5 minutes. Add the tomatoes and saute together with other vegetables, add some salt and soy sauce. Now pour the vegetable stock and bring it to boil, add required salt and pepper, simmer for 5-10 minutes or until vegetables are cooked, and serve hot.

Masala Macaroni

Ingredients:

2 cups elbow macaroni boiled

2 tablespoon olive oil

1 large onion chopped

3-4 garlic cloves crushed

½ teaspoon cumin

1 bell pepper chopped

1 tomato chopped

1 tablespoon soy sauce

1 packet noodles/pasta masala

Salt and pepper as taste

Preparation:

Heat olive oil in a pan, add cumin and let it splutter, add crushed garlic and fry them till it gives a good smell. Add onions and fry them until pink, then add the chopped tomato and saute well, next add the bell pepper and fry together for a minute. Add soya sauce, then add boiled macaroni and mix them well. Add the masalas and mix till all flavors are nicely blended. Cook for a minute in low flame and serve hot.
