Easy Dinner Recipes

Ground Turkey Sloppy Joes


  • 2 tbsp. olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 carrot, chopped 
  • Kosher salt and freshly ground black pepper
  • 2 cloves garlic, pressed
  • 1 lb. lean ground turkey or chicken
  • 1 tbsp. chili powder
  • 1/4 tsp. ground cinnamon
  • 1 (8-ounce) can tomato sauce
  • 1/4 c. sweet relish
  • 2 tsp. Worcestershire sauce
  • 2 tbsp. red wine vinegar, divided
  • 3 Persian cucumbers, thinly sliced
  • 1/2 c. thinly sliced red onion
  • 6 thick slices toast or split burger buns


  • Take some oil in a large wok and heat it over medium flame. Add the onions, bell peppers and carrot.
  • Add some salt and pepper and saute until translucent.
  • Now add garlic and cook for 30 seconds more.
  • Add the turkey and cook until roasted and browned.
  • Season with chili powder and cinnamon.
  • Add some tomato sauce, relish and some Worcestershire sauce.
  • Lastly, add some vinegar and simmer until it begins to thicken.
  • Toss in the cucumbers and red onions.
  • Spoon a little of this mixture on toast and serve with some pickles.

Chicken Scampi Pasta


  • Kosher salt
  • 1 pound thinly-sliced chicken cutlets, cut into 1/2-inch-thick strips 
  • 3 tablespoons olive oil 
  • 8 tablespoons unsalted butter, cubed 
  • 6 cloves garlic, sliced 
  • 1/2 teaspoon crushed red pepper flakes 
  • 1/2 cup dry white wine 
  • 12 ounces angel hair pasta 
  • 1 teaspoon lemon zest plus the juice of 1 large lemon 
  • 1/2 cup freshly grated Parmesan  
  • 1/2 cup chopped fresh Italian parsley 


  • Boil a large pot of salted water for the pasta.
  • Heat a large skillet and add some oil.
  • Add the chicken pieces into the skillet and brown it evenly. Remove this chicken on a plate when done.
  • Pour butter in the skillet and add some garlic and red pepper flakes. Cook the garlic until golden.
  • Next, add the vinegar and let it simmer. When reduced to half, remove from the stove and keep aside.
  • Cook the pasta until tender and drain when done. Preserve a cup of pasta water.
  • Add this paste and the water to the skillet along with the lemon zest, chicken and juice.
  • Add the remaining butter and sprinkle grated cheese and parsley. Serve hot!

Easy Fried Rice


  • 1 cup rice, preferably long-grain
  • Vegetable oil – 2 tablespoons
  • 2 eggs, beaten
  • 2 bacon rashers, chopped
  • 1 carrot, grated 
  • 2 shallots, sliced
  • 1/2 cup frozen peas
  • 1 tablespoon soy sauce
  •  Sesame Seeds, to garnish
  • Shallots, to garnish


  • Cook the rice in a large pot of boiling water. Drain when done and set aside.
  • Heat oil in a wok and add the eggs. Set it like the base by giving it a form of an omelet. Transfer to a plate and cut into short and thin strips.
  • Add the bacon to the same wok and cook for a few minutes until golden. Add the vegetables and cook for a few minutes. Lastly, add the rice and stir.
  • Add the egg strips and soy sauce. Sprinkle with sesame seeds and shallots. Serve.
