Dinner is considered a critical meal because it is taken at the end of the day, in a peaceful mood when the body discharges healthy hormones. Chicken Broccoli And Beetroot Salad With Avocado Pesto

Ingredients

  • 250g thin steamed broccoli
  • 2tsp rapeseed oil
  • Three chicken breast without the skin
  • One red onion finely sliced
  • 100g bag watercress
  • Two raw beetroots, peeled and grated
  • 1tsp nigella seeds
  • Ingredients for Avocado paste
  • A small pack of basil
  • 1avocado
  • ½ garlic cloves, crumbled
  • 25g walnut halves crushed
  • 1tbsp rapeseed oil
  • Juice and jest one lemon

Preparation Method

Boil water in a big pan, Put broccoli and cook it for 2 minutes. Drain water and clean under cold water. Heat a barbecue pan, Sauté the broccoli in ½ tsp rapeseed oil and barbecue for 2-3 minutes, turning till it’s well cooked. Keep it aside and let it cool. Apply remaining oil with the help of brush on chicken and add little salt and pepper. Barbecue for 3-4 minutes from both the sides until appropriately cooked. Let it cool then chop into thick pieces.

Keep aside a handful of basil leaves to top the salad. Transfer rest in a grinder and add avocado, garlic, walnuts, oil and 1tbsp lemon juice with 2-3 tbsp water and some salt and pepper. Grind until a smooth paste is formed, transfer it to a small serving dish. Drizzle the remaining lemon juice over chopped onions and leave it for few minutes.

Stack the watercress on a large platter. Sauté broccoli and onion with lemon juice in which onions were soaked in. Garnish with beetroot, but don’t mix it in the chicken. Spread over the set-aside basil leaves, the lemon zest and nigella seeds, and serve with avocado paste.
