When we talk about healthy dinner, we mean a meal that is easy on digestion and is nutritious also. A light meal is preferably eaten at night as our metabolism is also slow at that time. An ideal healthy dinner should also be taken a few hours before bedtime. The choice of healthy dinner recipes varies from person to person depending on their lifestyle, routine, and taste.

Chicken Parmesan And Veggie Skillet

Ingredients:

  • 1 – Egg
  • 2 tbsp. –breadcrumbs
  • 2 tbsp. – flour
  • ½ tsp. – salt
  • ½ tsp. – pepper
  • 1 – chicken breast
  • 1 tsp. –olive oil
  • 1 clove of garlic
  • 1 ½ cups – eggplants
  • ¼ tsp. – red pepper
  • 1 cup – pureed tomato
  • ¼ tsp. – salt
  • ¼ tsp. –pepper
  • 1sliced mozzarella cheese

Directions:

Beat the egg in a bowl. Take another bowl to add flour salt and pepper powder and mix well. Heat a pan. Take the chicken breast, dip it in the beaten egg and roll it over in the flour mixture and cook until brown. Flip it to make sure it gets cooked from both sides. Now remove the cooked chicken from the pan and add olive oil and garlic cloves. To this add chopped eggplants. Add red pepper flakes and tomato puree. You can add little salt and pepper as per your taste. Let it cook for 5 mins. After that put the previously grilled chicken breast on the eggplant gravy. Top it up with a slice of fresh mozzarella cheese and bake this in the oven at 190°c for 12 mins. Your chicken parmesan and the veggie skillet is ready.

Honey Lime Shrimp

Ingredients:

  • 1 tbsp.  oil
  • 1 pound – shrimp
  • 1 tsp. – garlic chopped
  • ¼ cup honey
  • 1 – lime juice
  • 1 b – asparagus
  • 1 bell pepper
  • 1 tsp. – garlic chopped

Directions:

Heat a pan, add oil, chopped garlic, and shrimp. Add the seasoning. Add honey and lime juice. Cook shrimp for 2 mins. Take another pan and heat olive in it. Cook asparagus and bell peppers with little salt and pepper. Add chopped garlic to it. Now, add the cooked shrimp in this mixture and cook for 2 mins. Serve hot.

Steak Fajita Rice Bowl

Ingredients:

  • 4 Oz – flank steak
  • 1 – red onion
  • 1 – red bell pepper
  • ½ tsp. – salt
  • 1/2tsp.- pepper
  • 1 tsp. – onion powder
  • ¾ tsp. – chili powder
  • 1tbsp.- lime juice
  • ½ cup – rice

Directions:

Cook rice and keep it aside in a bowl. In another large bowl mix steaks, onions, red bell pepper, and all the spices well. Add lime juice and mix it well too. Spread the mixture in a baking tray and bake it in the oven at 230°c for 15 mins. Top it with rice. Enjoy hot.

Conclusion

A healthy dinner gives us a sound sleep. Too much oily or fried food should be avoided at dinner. Healthy dinner should have all portions of nutrients and veggies.
