Dinner Ideas For Two: Weeknight Chicken Fajitas For Two
- Ingredients needed
- 1tbsp sweet pepper (paprika)
- 1tsp dry Chinese parsley
- 1tsp powdered cumin
- ½ tsp each salt, garlic, jalapeno, and pepper
- ½ tsp dries thyme
- ¼ tsp white pepper
- 4tbsp olive oil, divided
- 2tbsp marinade for chicken
- 4tsp lemon juice
- 1tbsp lime juice
- 1/8 tsp liquid smoke (totally optional)
- 2boneless chicken breast without skin (halves), cut into slices
- 1medium onion, diced
- One medium sweet red pepper, diced
- Four flour tortillas (6”), heated
- Optional toppings: Cream cheese, salsa, guacamole, grated American cheese, diced lettuce, and tomatoes.
Mix herbs and spices and keep aside 1tbsp. Put 2tbsp olive oil, marinade for chicken, juices and liquid smoke if preferred for the leftover mixture. Put in a big reusable plastic bag. Then, put the chicken, seal the bag and turn to coat. Chill it for 2 hours, turning occasionally.
Drain and throw away the marinade. Use a big frying pan to toss the chicken in 1tbsp oil until its not pink. Take off and keep warm
In the same frying pan toss onions, red peppers and 1tbsp herbs and spices in leftover oil until crunchy and warm. Transfer the chicken back to the pan, heat correctly. Take a spoon of chicken and vegetables put it on tortillas, fold inside. Serve with the topping of your taste.
Garlic And Chili Prawns
- Eight large raw shell-on king prawns
- Three cloves of garlic
- One fresh red chili
- Few leaves of fresh parsley
- 50ml olive oil
- ½ tsp smoked sweet pepper (paprika)
Strip the prawns, remove the head and leave the tail. Using a knife at the back of strip prawns, take out and discard the dark veins. Take off the skin of garlic and slice with the chili. Finely cut the parsley leaves. Pour oil in a small pan on medium-high heat, put garlic and chili and sauté for 30 seconds to flavor the oil before adding paprika. Put the prawns and cook for 2 minutes on each side, until cooked properly. Add most of the parsley leaves when turning the prawns.
Drizzle half lemon juice. Take off the pan from flame and put over the leftover parsley leaves and a pinch of sea salt. Serve with hot crispy bread and leftover lemon slices to sprinkle all over.
