For this next week’s simple dinner ideas I’m going to share some of my tricks for cooking up some quick and easy tacos for the busy days in my life. Tacos are so much fun to eat, especially with the right salsa on the side, or even some grilled chicken (or fish). These easy dinner ideas can be used for any time of the week.

The trick for these next week’s simple dinner ideas are to keep it simple. One of the best meals I’ve had (and still love) is a delicious Southwestern taco that I make in 25 minutes. I use beef, vegetables and an already prepared salsa. Southwestern food goes well with many other foods as well, but you can serve it with fish, meatballs, bean dips, and so much more.

Another one of my simple dinner ideas is using rotisserie chicken. I use boneless, skinless chicken in my salsa and make it taste just like real chicken. I love the way it makes me feel when I eat it, and I love the way you can make it healthier by simply cutting up a sweet potato into quarters. Just throw all of your veggies in a zip bag and pop them in the refrigerator, and when you’re ready to cook your rotisserie chicken simply throw it in the pan and cook it up. It’s delicious and really healthy.

If you’re looking for some more simple dinner ideas for weeknights, look no further than your toaster oven. I know it sounds strange, but sometimes cooking dinner in a toaster oven can be a lot better than cooking dinner at home! There’s just something about preparing dinner in an appliance that has a bigger cooking surface and a warming drawer. Sometimes it’s just easier to let your toaster do the work than it is to go through the trouble of making meal preparations, chopping vegetables, washing vegetables and getting everything ready in a hurry.

If you have a pressure cooker, why not create a baked casserole with a delicious sauce in the bottom of the pot. Serve the casserole on top of a tortilla shell and add some tortilla chips and fresh salsa. Top off with some crunchy, fresh tortilla chips and a little bit of toothpick sauce. Easy, fast, healthy dinner.

Another delish recipe for the week that’s both easy and delicious is macaroni and cheese. This is a hearty, cheesy pasta dish that you can make by putting together a delicious sauce along with the noodles. Use low-fat or fat-free cheese and serve with crackers to create a satisfying meal. If you happen to be in a hurry for time, you could always throw some pasta (any kind, including spiral noodles) into the crockpot and let the slow cooker do the rest. When it’s ready, simply add the pasta and sauce, stir, and enjoy your homemade meal.

The ideas are almost endless. You don’t have to look far to find simple dinners that are both tasty and healthy. With the variety of recipes available today, you can easily mix and match ingredients to come up with a meal that is uniquely your own.
