If so, then it’s about time you started cooking your own meals and saving money at the same time. I’m going to share with you one simple vegan recipe that will change your cooking style and will help you live a healthier life. It’s called “Tofu & Veggies.”
Simple Vegan Recipe
Here’s how this simple vegan dinner recipe works. Start out by roasting a tablespoon of extra firm tofu over a hot stove until it is almost burning. Leave it cooking for about ten minutes, turning it often to keep from burning. After that, grab some thinly sliced fresh vegies and a sliced radish and place them on top of the cooked tofu. At the end, cover the radish and sauce with a piece of sliced white onion, which should be placed on top of the roasted eggplant.
Now, it’s time for the sauce. One (or two) can of soy sauce can be placed into a large zip lock bag and inserted into the center of a medium-sized Ziploc container. Use food coloring tablet to make the sauce lighter (I prefer yellow). You will also want to add a couple of tablespoons of black pepper and a little bit of turmeric powder to help enhance the flavor. Give it a few minutes to sit and blend well, while you mix in the other ingredients (if you are using them) into the already prepared pan (with the tofu & veg).
Now, it’s time for the delicious sauce! About two cups of freshly chopped veggies (sweet potatoes, carrots, cauliflower, broccoli, mushrooms, etc.) combined with one tablespoon of soy sauce and a quarter teaspoon of ground ginger blended well into a paste. Spread this mixture onto a sheet pan and pop into the oven at the same time you are preparing the tofu & veg. If you have time, while the veggies and sauce mixture are cooking, you might even want to run through a pasta machine to create some extra sauce.
If you are looking for a very quick and easy dinner, this is it! I like to keep a frozen block of tempeh or similar and defrost it a couple of hours before dinner. This way I have a great base to build on with the sauce, vegetables, etc., and I can still snack on some apples, berries or trail mix while I’m cooking the dinner.
In fact, after dinner you can even serve it chilled until the next day. I’ve been enjoying a great bowl of spaghetti with fresh veggies, marinated mushrooms, artichoke hearts, garlic, and a drizzle of olive oil. It’s an absolutely delicious dinner that uses rarely-used Italian ingredients to create a delicious and flavorful meal. You can easily modify this pasta recipe to include either pasta or baked potatoes as the base. Just substitute your pasta bowl for a potato bowl and start cooking.
There are many super healthy ingredients you can find that you can use to make all kinds of delicious meals. Most of them are readily available in your everyday produce section at the grocery store. One of my favorite vegetables is zucchini which makes a wonderful base for any veggie recipe. Also, there are many herbs and spices that will enhance your meals when they are made using these ingredients.
If you love mealtimes, you can also prepare some delicious stir fries by adding chick peas, tomato sauce, nutritional yeast, and a touch of Cayenne pepper. For dessert you can simply follow some simple vegan dessert recipes such as vegan sour cream, brown rice pudding, or a vegan chocolate cake. No matter what you are in the mood for, these recipes will make your mouth water and your stomach full. It’s really easy to prepare these delicious dishes that are both tasty and healthy.
