Ingredients:

  • 1 ½ cup – finely   chopped vegetables (carrot, cabbage, beans, peas)
  • 1 onion finely chopped
  • 2 – Garlic cloves
  • 1 tbsp. – clarified butter
  • 1tbsp. – cornflour
  • salt to taste
  • pepper to taste
  • some coriander leaves

Directions:

First, wash all the chopped vegetables and boil in water until soft. Heat a pan and add a tbsp. of clarified butter. Add chopped garlic cloves and saute for 2 mins. Add onions and cook well. Now add the boiled vegetables with water and let it simmer. Add salt to taste. Mix flour and water to make a paste. Add this paste to the soup and keep cooking. Add pepper powder and let it simmer for few more mins. Serve soup in a bowl and garnish with some coriander leaves and serve.

Ingredients:

  • 1 tsp – butter
  • 1 onion chopped
  • 2- Bay leaves
  • 2 – Garlic cloves
  • half of the chopped carrot
  • 3- tomatoes chopped
  • ½ tsp. – salt
  • 1/2cup – water
  • 1tsp. – sugar
  • 1/2tsp. – pepper
  • 2 tbsp. – cream

Directions:

Heat a pan and add butter. Add garlic cloves, bay leaf and chopped onions to it. Cook well. Add chopped carrots, tomatoes and salt. Add a little water. After a few minutes, the tomatoes will get mushy and soft. Take it out from the heat and let it cool. Once cooled churn the mixture to get a puree. Sieve the puree with the help of a filter. Add the puree in a pan and heat it again, adding more water to it. Add little salt, sugar, and pepper and cook for2 mins. When the soup starts thickening add cream to it. Garnish with mint or coriander leaves and enjoy hot.

Cream of Mushroom Soup

Ingredients:

  • 2 tsp. – olive oil
  • 2tbsp. – butter
  • 2 tbsp. –onions finely chopped
  • few garlic cloves chopped
  • 10 – thinly sliced mushrooms
  • 1 tsp – all-purpose flour
  • 3 cups water or veg stalk
  • pepper to taste
  • salt to taste
  • few thyme herbs (optional)
  • ¼ cup cream

 Directions:

Heat olive oil and butter. Add chopped onions and garlic together and saute well. Add sliced mushrooms and cook well for 2 mins. Now add a tbsp. of flour and cook it too. Add water or vegetable stock. Cover it and let it boil for 5 mins. After 5 mins remove a cup of boiled mushroom from the mixture and churn it separately to get a mushroom puree. Then add the puree to the remaining mixture and add some cream also. Simmer for one minute. When the soup has a creamy consistency, serve it in a bowl, add pepper and thyme herb, and serve it hot.
